Winemaking

The grape varieties are vinified separately, destemmed and crushed to macerate traditionally. Extraction is done by gentle and regular pumping over.

Tasting

Deep garnet color with purple highlights. Complex, intense nose, with notes of jammy black berries, mocha and sweet spices. Full and creamy on the palate, rich wine with velvety tannins combining freshness and maturity.

Food and wine pairings

Roast lamb with rosemary, rib of beef with morels, hare stew, game in sauce and platters of mature cheeses.
