Winemaking

The grape varieties are vinified separately, destemmed and crushed to macerate traditionally. Extraction is done by gentle and regular pumping over.

Tasting

Deep red color with ruby ​​highlights. Intense and subtle nose: toasted and roasted at first approach. The notes of liquorice, cachou and blackberries characterize the Grenache while those of fresh morello cherries and spices come from the Syrah.

Food and wine pairings

Roast lamb with rosemary, rib of beef with morels, hare stew, game in sauce. It will also pair wonderfully with platters of mature cheeses.
